Monday was statistically thought to be the most depressing day of the year. Meek Gone Wild thought differently. Due to the impromptu arrival of a friend from Singapore a dinner party was casually thrown together. Wondering what I could feed them I rummaged around in the freezer and found some left over orange pastry (see mince pie recipe for pastry ingredients and method). After more sifting through the cupboards I found two pots of raspberry jam. Ideal. Jam tarts. It’s pretty simple:

1. Roll out your pastry until about 1/2 centimetre thick to cover a tart/flan tin.

2. Fill with whatever jam you like; lemon curd would be good

3. Roll out the remaining pastry and cut into long strips. Lattice over the top of the tart

4. Place in the oven at 180 degrees and cook for 25 minutes or until the pastry is golden and the jam is bubbling

5. Smile (not forced at all) and love Mondays
Directions for use: Depending how tarty you’re feeling you can either make one big tart like I did or makelittle ones.
Surely you’ll attract the wrong crowd with infantile baking innuendo like that in your headlines, Clauds. What next? Baps? Buns? Stiff peaks? Ban this filth…
