Chocolate, Orange and Lemon Sticks

Struggling to buy something for the person who has everything this Christmas? Solution! Why not make a gift. Try creating your own candied peel and dunking them in dark chocolate. Not only do they look great but I guarantee the lucky recipient will be suitably impressed.

Directions for use: Boil, dry, sugar, envelope in chocolate, wrap, pack and feel smug.

    Loving the present idea – will try and recreate this weekend. For the uninitiated, please could you be more specific with your instructions – is it REALLY a case of boil (for how long do you think?), dry (until dry I guess), then sugar and chocolate (ok that’s easy). Did you temper your chocolate to make it shiny (not THAT is technical!).
    Eagerly awaiting advice.

      It’s very easy but time consuming so if possible try to make them in advance.
      In sum, cut the fruit up into strips (2 oranges/2 lemons), removing the flesh but leaving the pith and place in a large saucepan. Cover fruit with water and simmer for 30 minutes. Drain and recover with fresh water, simmer for another 30 minutes. Strain liquid over a bowl, retaining the water. Put the fruit back in the pan adding 100g granulated sugar to 100ml of reserved water. Simmer for about 30-40 minutes, until translucent. Take off the heat and leave to cool in the juice.
      Remove the fruit from the juice and lay out on a cooling rack. Place in the oven on the lowest setting until it dries out (1hr or so). Remove from oven and coat in granulated sugar. Leave to completely dry (best overnight) on a cooling rack.
      Once dry, melt the chocolate over a simmering bowl of water. Dunk half the candied peel in and leave to dry on greaseproof paper.
